Sustainable Stoneground Light Sift Rye Flour is milled from rye grain with a portion of the bran removed, retaining the germ, endosperm and some finer bran particles. It offers a balanced rye flavour and produces a lighter crumb than whole rye flour, while maintaining depth and character. Rye flour has higher levels of natural sugars than wheat, contributing to increased colour and flavour during baking. It also absorbs and retains more water. This flour is well suited to 100% rye baking as well as blended doughs and sourdough applications.
